Mojo sauce recipe

 

40g coriander leaves

½ clove of garlic

4g of cumin powder

2g of black pepper

50g of vinegar

200g of olive oil

Pinch of salt

 

Method

 

Place all ingredients into a blender and blitz together for approx. 2 mins and serve like a salsa with meat

 

 

 

Meat rub

 

1 clove of garlic

2 tablespoons salt

1 tablespoon pepper

1 tea spoon of smoked paprika

1 tea spoon of fennel seed

The skin of 1 lemon pealed with speed peeler

The leaves of 2 rosemary stems

 

Method

 

Chop garlic roughly. Peal the lemon with the paler, and chop rough. Put rosemary leaves together chop it rough. Place into bowl with drop of olive oil and mix.

Add in pepper, fennel seed and smoked paprika.

Mix together and rub into the meat an hour before cooking. Add more salt to your meat if need when cooking.

 

 

 Fennell

 

2 bulbs of fennel

1 clove of garlic

100ml extra virgin olive oil (or otehr0

Juice and zest of 2 lemons

1 teas spoon of sugar

5-6 sprigs of fresh coriander

1 hand full of wild rocket

 

Method

 

Chop fennel in half and char on chargrill or grill. Take sheet of tin foil and make a little parcel to hold the fennel. Put in the chopped garlic, olive oil, juice & zest of the lemons and a spoonful of coriander seed. Put a tin foil lid on that and poke in 5-3 holes. Put flat into a baking tray put back on top of the bbq on a slow heat or put in the oven. Before serving take out and add coriander leaves and rocket.

 

 

Marshmallows & Chocolate

 

Ingredients 

Large marshmallows

Half jar of Nutella

Crushed nuts (optional)

 

Method

 

Put marshmallow on cocktail sticks or forks. Put half jar of Nutella in microwave heat, pour heated Nutella in a bowl. Heat marshmallow sticks on barbeque, dip in to the melted bowl of Nutella and dip into crushed nuts.
